Radishes, Feta Cheese in Pita Bread

4 cups thinly sliced radishes

8 oz. crumbled feta cheese

¾ c sliced black olives

¼ c chopped fresh mint

1 clove garlic, minced fine

¼ t salt

2 tablespoons lemon juice

¼ t Dijon mustard

9 T olive oil

Freshly ground pepper

4 Pita Breads

Mix first four ingredients.  Mix next six ingredients into a dressing.  Pour over the radish mixture and mix well.  Let marinate for 30 minutes, then use as a pita bread filling.

 

Radish Dip

3 cups finely chopped radishes

1 c softened cream cheese

½-3/4 c sour cream

2 T chopped chives

Salt and pepper

Beat together the cheese and sour cream and chives.  Add radishes and stir well.  Season with salt and pepper.  Serve with crackers or other raw vegetable chunks.

 

Green Bean/Radish Salad

Cooked Green Beans, cut into bite size pieces

Sliced radishes

1 clove garlic, minced fine

¼ t salt

2 T red wine vinegar

¼ t Dijon mustard

9 T olive oil

Freshly ground pepper

Slivered almonds, toasted

Mix together green beans and radishes.  Make a dressing with the next six ingredients.  Add to vegetables.  Sprinkle almonds on top.

 

Roasted Radishes

20 radishes, cut into ½ inch slices

2 tablespoons olive oil

1 tablespoon lemon juice

Salt and freshly ground pepper

1-2 tablespoons chopped parsley, chives or tarragon

Preheat oven ot 400 degrees.  Combine radishes with oil and lemon juice.  Put on a baking pan and liberally season with salt and pepper.  Roast in oven for 20 – 30 minutes or until radishes are cooked but still have a bit of snap to them.  Toss warm radishes in serving bowl with fresh herbs.  Taste and add more salt and pepper if necessary.
